Boxty, Ireland's Famous Potato Pancakes: Recipe  

Boxty is different from other potato pancakes or latkes when you bite into one and witness the crispy hash brown-like outside and soft, dough-like center.  

What's Boxty? Boxty, an Irish potato pancake, is made from mashed and shredded raw potatoes.  

The inside of these oil-fried potato pillows from heaven is soft like a pancake but crispy on the outside. Buttermilk, flour, and baking soda puff them up in oil and give them a deep golden crust.   

Recipe for Boxty: Ingredients 1 1/2 cups chilled mashed potatoes 2 cups peeled, shredded potatoes

1 1/2 cups all-purpose flour 1 tsp baking soda, 1 tsp salt 1/2 tsp pepper,1-2 cups buttermilk Frying oil

Step 1: Prepare potatoes Boxty has mashed and shredded potatoes. Make mashed potatoes beforehand.
